Slow Cooked Pork & Pumpkin Stew

 

Inspired by the New Mexico Posole, this hot and spicy stew is satisfying, nourishing and hardy. Packed with seasonal vegetables and spices, this gluten-free slow cooker pork and pumpkin stew, is one of our favourite one-step winter warmers.

 

Ingredients

  • 350g pork tenderloin, diced
  • 2 onions, chopped
  • 3 chillies, chopped
  • 1 tin chickpeas, rinsed
  • 150g fresh pumpkin, cubed
  • 250g quinoa
  • 2 tbsp ground cumin
  • 2 tbsp garlic powder
  • 2 tbsp oregano
  • 1 tin passata
  • 1 litre chicken stock

 

Method

  1. Add all of the ingredients above to your slow cooker, cover with the chicken stock and gently stir until mixed
  2. Cook for 4-5 hours on high or 7-8 hours on low
  3. As soon as the pork is tender, mix and serve up
